A note on kippers: kippers generally refer to kippered herring (like ours). It is possible to kipper other fish, and one can find recipes for kippering salmon and other fish in Scottish cookbooks. Kippering involves, splitting, gutting, salting and smoking. Kippers are essentially cured through the salting and smoking process.
Kippers can be baked, fried, cooked in a tall jug of boiling water, or grilled outside (a popular method of reducing the aromas).
