Back in Victorian times, the grand estates needed cooks - and a Cookery School was established in Glasgow in 1876 for just that purpose. To teach willing staff of a household the basics of Scottish cooking. The school went through various incarnations and mergers until it was formally establish in 1908 at the Glasgow and West of Scotland College of Domestic Science. Two years later, the notes and recipes of the founder were published as The Glasgow Cookery Book. Here now is the 100th anniversary reprinting, complete with a lengthy history of the amazing ladies that created the school, the recipes and the cookbook itself.
Enjoy the succinct nature of the guidance - like "Dips should be the consistency of thick cream." or the listing of the seasons of Scottish native game. No fancy pictures, but there are occasional line drawings like one for making Sausage Rolls. Basics like coffee, tea, cocoa are included as well as Lobster Thermidor with 9 steps.
